‘Ajineh Mwarraqah

March 25th, 2009

Dimah - http://www.orangeblossomwater.net - Ajeena Mwaraqa 7

A’ineh is the Arabic word for Dough. This dough is very famous in Syria, it is a base for many dishes, including desserts. It is made from flour, egg, ghee, water and salt. Traditionally we use local ghee which is so rich and full of flavor, but sometimes my mom uses Crisco shortening and we still enjoy the taste.

It is easy to find this dough in the markets in Syria, therefore most people stopped making it at home, but my mom has a rule that homemade dough is much better than purchased dough, and I totally agree with her. This the list of dishes that depend on this dough, and next posts will be about these dishes:

1. Ush Al Bulbul

2. Sambousek Mwarraq

3. Ozee

4. Sha’eebiyyat (Dessert)

5. Bsaisat / Twaitat (Dessert)

I have to decide before end of March if I want to register for a master’s program in “Syrian Virtual University” (It was established on the 2nd of September 2002 and is the first virtual education institution in the region), and I have two choices which are MBA (Master of Business Administration) and MQM (Master of Quality Management), but I prefer MBA.

I have no idea about economics, accounting, statistics and other subjects, so do you think a pharmacist could success in this program?, is it easy to study subjects related to business? I know I’ll learn how to manage my pharmacy, to know about market, and other things related to business, but I need to hear your opinions, maybe you could help me to take the right decision!

This is the same recipe I used in previous post “Mini Cheesecake“, but this time I made one with Oreo crust (I made some changes in measurements, I used 4 packages of Oreo + butter (didn’t measure) + 2 tablespoon sugar , for filling 300 g of cream cheese + 3 tablespoons flour + 3/4 cup sugar + 1 egg) , and the other minis with digestive crust (same measurements in old post except I made the crust thicker so more biscuits and a little more butter).

Dimah - http://orangeblossomwater.net - Fried Kibbeh 93

Kibbeh is very popular in Syria, there are many types and shapes of Kibbeh such as fried kibbeh, grilled kibbeh, kibbeh cooked in yogurt sauce and others. Kibbeh Meqliyeh means fried kibbeh.

I said in previous post that Yalanji is very important in celebrations as an appetizer, also Kibbeh should be part of the appetizers in celebrations. Always table should contain Yalanji and Kibbeh, and they are so delicious when eaten together.

If you are going to make kibbeh for your family, you can serve it as a main course, with different salads such as:

Salad No.1: tomato, lettuce, mint, lemon, olive oil, and salt.

Salad No.2: tomato, cucumber, flat parsley, mint, onion, lemon, olive oil and salt.

Salad No.3: cabbage, tomato, lemon, olive oil and salt.

Salad No.4: cabbage, garlic, dried mint, ground sweet paprika, lemon, olive oil and salt.

or you can drink yogurt (Ayran) with kibbeh.
