Kibbeh Naiyeh means raw kibbeh, it consists of minced raw meat mixed with bulgur and spices. Kibbeh Naiyeh Bes-samneh means raw kibbeh with ghee and doesn’t have meat. It is a creation belongs to Hama, served as appetizer. It is made with bulgur, ghee, onion, parsley, walnuts, and spice.

1, 2, 3, 4, 5, 6, 7. Prepare fine white bulgur wheat, and rinse it in several changes of water.

8. Add 1/4 cup water to bulgur.

9, 10, 11. Add ground Aleppo pepper to bulgur.

12. Add salt to bulgur.

13. Set bulgur aside to soak for 60 minutes.

14. After 60 minutes, transfer bulgur mixture into a large plate.

15, 16, 17, 18, 19, 20. Knead bulgur mixture well with your hands until it reaches a consistency of a dough.

21, 22, 23. Put 1 tablespoon ghee in a pan and heat the ghee until smoking hot.

24. Add ghee to the dough.

25, 26, 27, 28. Again knead the dough with your hands.

29, 30, 31, 32. Add finely chopped onion to the dough.

33, 34, 35. Add finely chopped parsley to the dough.

36, 37. Add chopped walnuts to the dough.

38, 39, 40. Knead until all the ingredients are well combined.

41, 42, 43, 44. Divide the dough into balls each equals to 20 g.

45, 46, 47, 48. Take the ball and shape it as you see in the pictures.

Kibbeh Naiyeh Bes-Samneh

1 cup fine white bulgur

1/4 cup water, for soaking bulgur

1 1/2 tsp ground Aleppo pepper

1 1/4 tsp salt

1 tbsp ghee,
preferably samneh Arab (Syrian ghee made from sheep’s milk)

1/4 cup finely chopped onion

1/3 cup finely chopped parsley

1/3 cup chopped walnuts,
(small chopped)

 

Prepare fine white bulgur wheat, and rinse it in several changes of water.

Add 1/4 cup water to bulgur.

Add ground Aleppo pepper to bulgur.

Add salt to bulgur.

Set bulgur aside to soak for 60 minutes.

Knead bulgur mixture well with your hands until it reaches a consistency of a dough.

Serve.
