Shawerma Dajaj

Shawerma or Shawarma is a middle eastern sandwich-like wrap of shaved lamb, goat, chicken, turkey, beef, or a mixture thereof. The meat is placed on a spit, and may be grilled for as long as a day. Shawerma Dajaj means Chicken shawerma, and I cook it in the oven.

Let’s make Shawerma Dajaj:

Wash and dry chicken breasts.

1. Cut chicken breasts into small strips.

2. Put the chicken strips in a bowl.

3. Add chicken shawerma spices, garlic powder, balsamic vinegar, lemon juice, salt and turn the chicken to coat.

4. Add corn oil and turn the chicken to coat.

5. Put the chicken strips in a ziplock bag, and keep in the refrigerator to marinate for 24 hours.

6. After 24 hours, take the chicken and put in a baking dish.

7. Cover the dish with aluminum foil, and place the dish in the oven (rack position is the second from bottom), cook in the oven at 320°F (160 °C) for 30 minutes (when you cook the chicken in this step, you have to turn on the oven upper burner (upper heat “flame / broiler”), and turn on the oven bottom burner too “bake function”).

8. After 30 minutes, turn off the oven bottom burner, and keep the oven upper burner turned on, and keep the chicken covered with aluminum foil and cook for 20 minutes, then after 20 minutes remove the aluminum foil and cook the chicken in the oven uncovered for 10 – 15 minutes or until the water evaporates and the chicken is browned and cooked through. Make sure it is done, but not overdo it, because if you do, it will probably be dry.

9. To serve, bring pita bread or Arabic flat bread.

10. Add shawerma dajaj.

11. Add french fries.

12. Add cucumber pickle.

13. Add kraim ath-thoum (garlic sauce).

14. Roll up.

15. Serve shwerma dajaj wraps with extra kraim ath-thoum and french fries.

575 g chicken breast fillets, sliced in small strips

Notes and Tips

Chicken Shawerma spices is a blend of spices that is available in the markets, I use Syrian brand. If you find chicken shawerma spices in the market, and you want to use them in this recipe so it is better to adjust the amount of this spice in the recipe as you like, because the flavor may differ from a brand to another, Here is a photo for chicken shawerma spices.

    Hmm.. I was thinking of making this recipe but I couldn’t find chicken shawarma spices. I did however find the beef shawerma spices, would that be ok to substitute or is it not the same?

    Also, if I don’t have balsamic vinegar can I just use regular apple vinegar?

    Sarah: I tried using meat shawerma spices for chicken and found that the spices didn’t give the required taste, but if you want to try, so I suggest to make a test, use small quantity of chicken and try the spices, if you like it, go ahead and make more.
    You can use apple vinegar, but use less amount because it is strong.
