Shawerma Lahmeh means meat Shawerma, the preparation of shawerma lahmeh is similar to Shawerma Dajaj.

Let’s make Shawerma Lahmeh:

1. Cut lamb meat into small strips.

2. Put the meat strips in a bowl.

3. Add meat shawerma spices, mixed spices, garlic powder, balsamic vinegar, lemon juice, salt, lemon zest and turn the meat to coat.

4. Add corn oil and turn the meat to coat.

5. Put the meat strips in a ziplock bag, and keep in the refrigerator to marinate for 24 hours.

6. After 24 hours, take the meat and put in a baking dish.

7. Cover the dish with aluminum foil, and place the dish in the oven (rack position is the second from bottom), cook in the oven at 320°F (160 °C) for 30 minutes (when you cook meat in this step, you have to turn on the oven upper burner (upper heat “flame / broiler”), and turn on the oven bottom burner too “bake function”).

8. After 30 minutes, turn off the oven bottom burner, and keep the oven upper burner turned on, and add tomatoes wedges to the meat and keep the meat covered with aluminum foil and cook for 20 minutes.

9. Then after 20 minutes remove the aluminum foil and cook the meat in the oven uncovered for 10 – 15 minutes or until the water evaporates and the meat is browned and cooked through. Make sure it is done, but not overdo it, because if you do, it will probably be dry.

10. Prepare taratour (tahini sauce), in a jug add tahini, then add salt and lemon juice and water gradually with continuous whisking until combine and this mixture becomes smooth and can be poured.

13. To serve, bring pita bread or Arabic flat bread.

14. Add shawerma lahmeh.

15. Add tomato wedges that were cooked with the meat.

12. Add french fries, cucumbers pickle, chopped fresh tomatoes, and mint leaves (I forgot the mint in the picture).

13. Add tartour (tahini sauce).

14. Roll up.

15. Serve shawerma lahmeh wraps with extra french fries.

240 g fat free boneless lamb meat, sliced in small strips

2 tsp meat shawerma spices

1/2 tsp mixed spice

1 tsp garlic powder

1 tbsp balsamic vinegar

1 tbsp lemon juice

Salt

Zest of 1 lemon

2 tbsp corn oil

1 -2 medium tomatoes, cut into
wedges

Taratour (Tahini Sauce)

2/3 cup tahini

6 tbsp lemon juice

11 tbsp water

Salt

To Serve

Pita bread or Arabic flat bread

French fries

Cucumber pickle

Fresh tomatoes, chopped

Mint leaves

Taratour sauce

Put the meat strips in a bowl.

Add meat shawerma spices, mixed spices, garlic powder, balsamic vinegar, lemon juice, salt, lemon zest and turn the meat to coat.

Add corn oil and turn the meat to coat.

After 24 hours, take the meat and put in a baking dish.

Notes and Tips

Meat Shawerma spices is a blend of spices that is available in the markets, I use Syrian brand. If you find meat shawerma spices in the market, and you want to use them in this recipe so it is better to adjust the amount of this spice in the recipe as you like, because the flavor may differ from a brand to another.

Mixed spice is a blend of spices that I prepare at home by grinding these spices using coffee grinder, the spices are (cinnamon sticks, nutmeg, cardamom seeds, allspice berries, and black peppercorns).
