Foul Mdammas (Foul Mudammas) is very popular dish served for breakfast or any meal of the day. In Syria, we prepare Foul Mdammas in two ways and they are Foul Mdammas Bez-Zeit (fava beans with olive oil) and Foul Mdammas Bel-Laban (Fava beans with yogurt), I’ll share both recipes in this post.

Makdous Al-Bathenjan

Makdous Al-Bathenjan is prepared from baby eggplants stuffed with a mixture of  chopped walnuts, ground red pepper, salt and olive oil, the origin of makdous is Syria, and it has become popular in most Arab countries. Makdous is eaten for breakfast, or snack.

To have perfect makdous, you should choose the right type of eggplants and follow all the steps when preparing makdous.

I’ve purchased makdous form the store to compare it with homemade makdous, store bought makdous has a weird taste, it tastes like  pickles and not delicious. I love our homemade makdous because it is a real traditional Syrian Makdous.

This post is about the exact traditional way of preparing makdous, and this is how my grandmother and my mother make it.

Fattoush Maleh

Everybody knows Fattoush which is prepared from vegetables, but today’s recipe is about another type of Fattoush that is famous only in Hama, Syria.

Fattoush Maleh means Salty Fattoush, it is prepared from Arabic flat bread cooked with ghee, crushed garlic, water. and salt. The unique flavor of Fattoush Maleh comes from using Samneh Arabi (Syrian ghee made from sheep’s milk). Fattoush Maleh is prepared for breakfast, and served with pomegranate molasses.
